Eating in Season
We all know that it is healthier to eat fruits and vegetables in season. But what exactly does that mean? For, aren't we truly living in a global economy now and can't we reasonably get any fruit or vegetable ripe any time of year? Well, yes, and no. In order to do so, these items have to travel long distances and at great expense, adding both cost to the produce and cost to our environment by enlarging the carbon footprint. So, nutrients are at their height when produce is allowed to ripen on the vine (or the bush, per se). Buying local is always best. If you have ever wondered what months produce are at their height, here is a link that will spell it all out. I suppose for me one of the best reasons to eat in season is that the produce is the most affordable at that time. Since I live in a area where it snows during the winter, I will be getting a greenhouse and heating it so that I can have tomatoes not only at the end of the summer, because who really doesn't just love fresh from the garden tomatoes? Hmmm?
